RIB EYE STEAK WITH CHIMICHURRI, BROWN BUTTER MASHED POTATOES AND ROASTED CARROTS & PEPPERS

 So tonight we have a little heavier dinner but still very good.  I do admit this is my first time making chimichurri but it turned out good.

Roasted Carrots & Red Peppers (serves 2):
1/2 pound baby carrots
1 large red pepper
2 tablespoons olive oil
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme
salt and pepper to taste

Preheat your oven to 400 degrees. De vein and seed the red pepper cut it into about 1 inch chunks. Place red pepper and carrots on cookie sheet. Toss in spices and olive oil and bake for about 20 minutes.

Brown Butter Mashed Potatoes (3 servings):

3 medium russet potatoes
3 tablespoons butter
1/3 cup milk or cream
salt and pepper to taste

Peel and chop potatoes into about 1 inch squares (doesn't have to be perfect) place into cold water (enough water to cover the potatoes) in a pot and place pot on high until it comes to a boil.  Once boiling turn down to medium and simmer for about 20 minutes or until potatoes are soft.  In a separate pan place butter and turn on to a medium low heat and cook until butter looks brown and has a nutty fragrance to it. Once potatoes are soft drain them and place back in pan.  Add browned butter, milk or cream, salt and pepper and mash until a consistency you like.

NONTRADITIONAL CHIMICHURRI SAUCE (SERVES 6):
2 small bunches of parsley
1 green onion (this is the nontraditional part it is normally oregano)
6 leaves of basil
3 tablespoons white wine vinegar
6 tablespoons extra virgin olive oil
4 garlic cloves
1 teaspoon chili powder 
salt and pepper to taste

add all the ingredients to the blender and puree till pretty much smooth about pesto consistency.

SEARED STEAKS (SERVES 2):

2 thinly sliced rib eye (or your favorite steaks)
Pan Spray
Salt and Pepper to taste

heat your pan on medium high and spray pan with pan spray.  Season both sides of your steak with salt and pepper.  Once pan is hot place steaks into pan and sear each side for about 2 minutes (unless you enjoy your steaks a little more done then up to 5 minutes per side).  Let rest, off the heat, about 3 minutes before serving.
